Red Onion Pasta

I know what you’re thinking. Red Onion? Pasta?! But trust me…it’s so savory and delicious. With only a few ingredients, you can create something really unique and tasty. 

Ingredients 

2 Red Onions, diced
4-5 Garlic Cloves, minced
2 Cups Dried Pasta
1 Carton (2cups) Broth, beef preferred
2 blocks of white cheddar cheese (about two cups)

 

Directions

In a large pan, heat your oil and cook your red onions for about 2-3 minutes until soft. Add your minced garlic and cook another 2-3 minutes until fragrant.


Add your pasta to the pan. 

Add your broth to the pan and scrape all the goodness from the pan. 


Lower the heat and let the pasta simmer until the broth is absorbed and the pasta is al dente, about 10-15minutes.

Finally, add your shredded cheese. I used two blocks of cheddar but you could use a mix of your favorite melty cheeses. You could also use a touch of heavy cream to smooth it out. 

The end result is something amazing. It's super savory with a hint of sweet from the caramelized onions. Will be making this again ASAP!!! Give it a try and let me know what you think!
